How to Make a Vegan Mornay Sauce?

When I transitioned to veganism, I faced a dilemma: how could I replace the butter, milk, and cheese in recipes that heavily relied on these animal products? 😨

After experimenting and researching, I discovered how to make a vegan bechamel sauce. Then, the solution came quickly with nutritional yeast for that cheesy essence. To balance the flavors, I added a splash of apple cider vinegar to bring a touch of acidity 🧑‍🍳

The result is a creamy and comforting sauce I always look forward to eating! 🤤

When to use the Mornay Sauce?

The Mornay Sauce is fantastic because it's easy and quick to make, and pairs wonderfully with many dishes. I love using it for a comforting mac and cheese, or with vegetables like asparagus or Brussels sprouts.

My personal favorite way to enjoy this sauce is on a croque-monsieur loaded with eggplant. The creamy sauce melts into the crunchy bread in a way that's simply wonderful!

Ingredients

  • 10g flour
  • 10g olive oil
  • 200ml unsweetened milk (adjust for desired consistency)
  • 40g nutritional yeast (adjust to taste)
  • 2 tablespoons of apple cider vinegar

Instructions

  1. Heat the olive oil in a pot.
  2. Stir in the flour and cook, whisking consistently, for a few minutes.
  3. Gradually add the milk, stirring continuously to achieve the desired consistency.
  4. Stir in the nutritional yeast and apple cider vinegar until well mixed.
  5. Season with salt and pepper. I like to add a pinch of cumin as well. 🤫

Notes

  • Adding more milk will result in a runnier sauce.
  • More nutritional yeast will enhance the cheesy flavor.
