The short answer
The Mornay Sauce is essentially a béchamel sauce with cheese. In this vegan version, I use nutritional yeast and apple cider vinegar to create a creamy and indulgent cheesy sauce. It's perfect for greens, mac, and cheese, or croque-monsieur. Learn how to make it below ⬇️
The Mornay Sauce holds a special place in my heart. I discovered this sauce when I explored how to make my croque-monsieur irresistible. I was looking for a strong, cheesy flavor to add depth to this traditional French dish, and the Mornay Sauce answered all my prayers. 🙏
How to Make a Vegan Mornay Sauce?
When I transitioned to veganism, I faced a dilemma: how could I replace the butter, milk, and cheese in recipes that heavily relied on these animal products? 😨
After experimenting and researching, I discovered how to make a vegan bechamel sauce. Then, the solution came quickly with nutritional yeast for that cheesy essence. To balance the flavors, I added a splash of apple cider vinegar to bring a touch of acidity 🧑🍳
The result is a creamy and comforting sauce I always look forward to eating! 🤤
What do you need to make the Mornay Sauce?
The ingredients are likely already in your pantry or easily found in any grocery store:
- Any basic flour
- Extra virgin olive oil
- Unsweetened milk (I prefer soy milk, but almond milk also works well!)
- Nutritional Yeast – a vegan pantry staple!
- Apple cider vinegar – not as common, but easy to find and very affordable.
- I also like to add a pinch of cumin, that’s my personal touch 🤫
When to use the Mornay Sauce?
The Mornay Sauce is fantastic because it's easy and quick to make, and pairs wonderfully with many dishes. I love using it for a comforting mac and cheese, or with vegetables like asparagus or Brussels sprouts.
My personal favorite way to enjoy this sauce is on a croque-monsieur loaded with eggplant. The creamy sauce melts into the crunchy bread in a way that's simply wonderful!
