The short answer
The traditional ratio is 3 times more oil than vinegar. This means for a balsamic vinaigrette, you would use 1 tablespoon of balsamic vinegar for 3 tablespoons of olive oil. However, it largely depends on your taste. I explain how changing ratio is better for different recipes.
Respecting the classic 3:1 ratio is a great way to start making vinaigrettes. In my experience, you should adjust the ratio based on what spices, herbs and condiments you add.
What is the vinaigrette 3:1 ratio?
The 3:1 ratio between oil and vinegar is traditional for vinaigrettes and usually balances them well. Depending on the spices, herbs and condiments, you might want to adjust that ratio.
When I add lemon to my vinaigrette, making it more acidic, I increase the oil.
So, how do you balance it?
It mostly depends on your taste.

The best way to find out what is the perfect ratio for you is to try out. Here’s how I do it:
- Add the vinegar, salt and pepper in a bowl. Mix it thoroughly.
- Gradually add oil, whisking vigorously. Taste often until satisfied!
- Add your condiments and taste again.

My every-day side salads.
I enjoy adding freshness to my meals with a simple side salad, often with risottos or pastas.
I don’t want to spend too much time, so I make a simple vinaigrette. Which is a balsamic vinaigrette with 3 to 1 ratio.
Pasta Beans salad
With my leftover pasta, I create a quick pasta bean salad. It is a great way to repurpose your ingredients without having to eat twice the same thing.
For the salad dressing, I use the balsamic vinaigrette as a base. I add minced garlic and ginger, and red onion for a punchy, crunchy flavor that contrasts well with the mild textures of beans and pasta.
To balance the onion strong taste, I often adjust the ratio to 4:1, adding more oil. Another option is to put shallots instead.
